    • 2 medium onions, chopped

    • 8 oz celery (about 4-5 celery stalks), chopped
    • 5 cups chicken stock
    • 2 cups apple cider
    • 2 tsp salt
    • ½ tsp ground black pepper
    • ½ tsp cinnamon
    • ½ tsp ground ginger
    • ½ tsp cumin
    • pinch of cloves
    • 2 cups heavy cream
    • Apple Chips
    • 2 apples
    • 1 Tbsp light brown sugar
    • ½ tsp freshly ground nutmeg

    • 8 oz creme fraiche
    • ¼ cup heavy cream
    • 2 tsp ground ginger
    • ¼ cup crystalized ginger, finely minced
