    Ingredients

    • 1 cup beef stock
    • 2 Tbsp soy sauce
    • 2 Tbsp Worcestershire sauce
    • 1 Tbsp light brown sugar
    • 1 oz bittersweet chocolate, chopped
    • Kosher salt and freshly ground black pepper
    • 3 large carrots, peels and cut into 1-inch slices
    • 3 large parsnips, peels and cut into 1-inch slices
    • 1 pound baby potatoes, washed and quartered
    • 2 tsp fresh thyme, minced
    • ¼ cup parsley, minced and divided
